At Come Back Shack, the Burger Is Made When You Order It

The kitchen at Come Back Shack doesn’t start your burger until you order it. That sounds obvious until you’ve eaten enough drive-through food to forget it’s possible. On a weeknight off Bowman Road in Mount Pleasant, the patty hits the flat-top after you pay, and the difference shows up in the first bite, where the edges have gone crisp and lacy and the middle still gives.

The shop is locally owned and operated, with two locations — this one in Mount Pleasant and a second up in North Charleston. Ordering happens at a register. Someone runs the food out to your table, and by your second visit they tend to know your face. One regular on Google singled out the cashier, who “always makes us feel at home.” A national chain can train friendliness. It can’t quite fake this.

The menu stays close to the point. Burgers cooked to order, hand-cut fries they’ve branded as Come Back Fries, and milkshakes thick enough to stall a straw. The Carolina Gold burger runs Southern, with pimento cheese melting down the sides of the beef and a nest of fried onion straws on top for crunch. The chicken tenders keep the kids quiet. Nothing on the board is complicated, and that seems to be the whole idea.

Customers keep reaching for the same shorthand. “A cross between Five Guys and Shake Shack,” one wrote, “but with better service and prices.” The comparison helps, though it gets the lineage backward. Those two are chains that grew out of a single storefront. Come Back Shack is the single storefront, still run by the people whose money is on the line.

Two Locations

This is the food the Lowcountry eats on an ordinary Tuesday. The magazine spends plenty of ink on the dining rooms downtown and the seafood houses out on the water, and it should. But the everyday version of eating here is a counter, an order number, and a burger somebody cooked for you a few minutes earlier. Come Back Shack does that version about as well as anyone around, which is why the lots fill up and the reviews read like thank-you notes.

Both shops stay open late. A traveler passing through wrote that they rolled in near closing at 8:30, didn’t want a fast-food burger, and got this instead. They left happy. Most people do.
